Cinnamon Toast

My mother, Marie Ellison Head, made the best Cinnamon Toast in the oven broiler of her cookstove. I have a small countertop oven toaster which I use to make mine. Cinnamon Toast is easy to make. The hardest part is standing there, watching to make sure it doesn't burn. Marie preferred white bread..hardly anyone used wheat bread--this was in the 1960's---did it even exist then?

To make it, you take a slice of bread--I use honey wheat--actually, you'd better use two slices--you will want more than one piece, it is that tasty--you butter the bread generously..I prefer real butter, but whatever you have on hand will do...then, sprinkle ground cinnamon evenly over each slice, and,finally, sprinkle granulated sugar over each slice...put more or less, to your taste...I like a lot of both! Broil or toast until the top turns crunchy and toasted. You may have to experiment a bit as to the degree of toasted you prefer. Whatever  you do--don't look away, or it will burn!

Cinnamon toast is a quick and easy treat from a simpler time and place. My memories of it are connected strongly to my mother.  It was one of her favorite something-sweets, along with peanut butter fudge and chocolate fudge..homemade, of course, in an iron skillet and stirred with a wooden spoon. Marie was born in 1921 and was a great old-fashioned cook.

I will have to remember to make Cinnamon Toast more often. I will even have to show my grandkids how to make it, now that they are older and would enjoy doing it themselves. I will be sure they know it was a favorite of their great-grandmother, Marie, who saw only one of them, Ross, before she died in 1994. Of course, I believe she's watching all of us, with Daddy and the other beloved family members at her side, from Heaven. I will be sure to eat more Cinnamon Toast in honor of the memory of my mother, Marie.
